Ferric Sodium EDTA Trihydrate is a chelated iron compound formed by complexing ferric iron (Fe³⁺) with ethylenediaminetetraacetic acid (EDTA) and sodium ions. The trihydrate form contains three molecules of water of crystallization, offering improved stability and solubility. It is used in food fortification, particularly in acidic beverages, cereal flours, and sauces, due to its resistance to undesirable color and flavor changes and its ability to prevent iron-induced oxidation.
