DL-malic acid is the racemic form of malic acid, a dicarboxylic hydroxy acid that occurs naturally in apples and other fruit. Nustras supplies it as a white crystalline powder or granule used mainly as an acidulant and flavour agent in foods, beverages and supplements, and as a counter-ion in mineral salts.
It is formulated into confectionery, especially sour-coated candies and chewing gum; into beverages, drink mixes and effervescent tablets; into fruit preparations, jams and bakery fillings; and into supplement powders and gummies.
DL-malic acid is supplied as a white crystalline powder or granule (CAS 6915-15-7, molecular formula C4H6O5, molecular weight 134.09). Assay, melting range, residue on ignition and fumaric and maleic acid impurities are standardised to specification; identity is confirmed by infrared spectroscopy and assay by acid-base titration. Heavy-metal and microbial limits are supplied to specification and confirmed on each lot's certificate of analysis.
Nustras supplies DL-malic acid in bulk commercial quantities, in food-grade bags, to manufacturers and formulators internationally, with a certificate of analysis, specification sheet and country-of-origin documentation on every lot. DL-malic acid is an accepted food additive in major markets, used at the level required for its technical function; buyers confirm the permitted use and level for their application.
