Watermelon Juice

Watermelon Juice is the juice pressed from the flesh of the watermelon fruit (Citrullus lanatus), supplied by Nustras as a spray-dried juice powder and as a concentrate for beverage and food manufacturing. The juice contains natural fruit sugars, the amino acid L-citrulline, potassium and the carotenoid lycopene, which gives the flesh its red colour.

It is formulated into fruit drinks and drink mixes, sports and hydration beverages, smoothies, gummies and confectionery, frozen desserts, flavoured supplement powders and cosmetic preparations.

The powder is pink to light-red and free-flowing with a characteristic fruity odour; the concentrate is a red liquid. Each is standardised to specification for soluble solids, moisture and solubility; identity is confirmed by organoleptic examination and the sugar profile on HPLC, and lycopene content can be reported on request. Heavy-metal and microbial limits are supplied to specification and confirmed on each lot's certificate of analysis.
