Streptococcus thermophilus is a Gram-positive, thermophilic lactic acid bacterium, supplied by Nustras as a freeze-dried bacterial culture powder for use as a probiotic ingredient and as a dairy starter culture. It is one of the two species that define yogurt, where it ferments lactose to lactic acid alongside Lactobacillus delbrueckii subsp. bulgaricus.
It is formulated into probiotic supplements in capsule, sachet and powder form, into multi-strain blends, functional foods and beverages, and into yogurt, cheese and fermented-milk starter cultures. Depending on grade it is supplied pure or standardised on a carrier such as maltodextrin.
The material is an off-white to cream, free-flowing freeze-dried powder. Viable count (CFU/g) is standardised to specification and determined by plate count; strain identity is confirmed by 16S rRNA sequencing or an equivalent genotypic method, and heavy-metal and microbial limits, including the absence of specified pathogens, are supplied to specification and confirmed on each lot's certificate of analysis.
Nustras supplies Streptococcus thermophilus in bulk commercial quantities, in sealed moisture-barrier packaging within fibre drums, to manufacturers and formulators internationally, with a certificate of analysis, specification sheet and country-of-origin documentation on every lot. Streptococcus thermophilus is an accepted food culture and supplement ingredient in major markets; buyers confirm the permitted strain, dose and claim for their application.
