Soy Sprouts

Soy Sprouts are young shoots germinated from soybean seeds (Glycine max), supplied by Nustras as a dried, milled powder and as a powdered extract for food and supplement manufacturing. Germination changes the composition of the seed, and the sprouted material contains protein, dietary fibre, the isoflavones genistein and daidzein, vitamins and minerals.

It is formulated into capsules, tablets and powdered supplements, protein and vegetable blends, plant-based foods, functional beverages and drink mixes, and cosmetic preparations such as creams and serums.

The material is a light-yellow to tan powder with a mild bean-like odour. It is standardised to specification for isoflavone content in the extract grade and for moisture, ash and particle size in the powder grade; identity is confirmed by the isoflavone profile on HPLC or by thin-layer chromatography. Heavy-metal and microbial limits are supplied to specification and confirmed on each lot's certificate of analysis.
