Pectinase

Pectinase refers to a group of enzymes that break down pectin, a polysaccharide found in the cell walls of plants. These enzymes are commonly used in food processing—especially in fruit juice production, wine making, and vegetable processing—to clarify juices, increase yield, and accelerate filtration. Pectinase includes subtypes such as polygalacturonase, pectin lyase, and pectin esterase.
