Maltitol is a polyol (sugar alcohol) derived from maltose, which is obtained from starch (usually corn or wheat). It provides a sweet taste similar to sugar but with fewer calories and a lower glycemic index, making it common in sugar-free and low-carb products. About 90% as sweet as sucrose, non-cariogenic (does not cause tooth decay), and often used in diabetic foods, sugar-free candies, baked goods, and chewing gum.
