Category: Functional Ingredients
Malt diastase is an amylolytic enzyme preparation, mainly alpha-amylase and beta-amylase, derived from malted grain, usually barley, and Nustras supplies it as a functional ingredient that breaks starch down into simpler sugars such as maltose and glucose. Its activity makes it valuable wherever controlled starch conversion is needed.
Malt diastase is used in brewing and distilling, in baking to improve dough handling, fermentation and crumb, in infant and cereal foods, and in digestive-aid supplements that support the breakdown of dietary carbohydrates. It is supplied as a powder (and as a liquid grade where required), standardised on enzyme activity rather than a single molecular formula.
The preparation carries CAS 9000-92-4 and is standardised by its diastatic (amylase) activity, expressed in the relevant activity units to specification. Activity, moisture, heavy-metal and microbial limits are supplied to specification and confirmed on each lot's certificate of analysis. Store cool and dry to preserve enzyme activity.
Nustras supplies malt diastase in bulk commercial quantities, in food-grade bags or fibre drums, to manufacturers and formulators internationally, with a certificate of analysis, specification sheet and country-of-origin documentation on every lot. Malt-derived enzymes are accepted food-processing and supplement ingredients in major markets; buyers confirm the activity level and claim for their application.
