Lysozyme is a naturally occurring enzyme that breaks down bacterial cell walls by hydrolyzing peptidoglycans. It is present in human saliva, tears, mucus, and especially egg whites, and most commercial lysozyme is extracted from chicken egg white. It is used as an antibacterial agent (especially against Gram-positive bacteria) and as a natural food preservative.
