Lecithin

Lecithin is a natural mixture of phospholipids, principally phosphatidylcholine with phosphatidylethanolamine, phosphatidylinositol and phosphatidic acid, obtained from soybean, sunflower and rapeseed oils during refining. Nustras supplies lecithin in fluid, powder and granular grades as an emulsifier, wetting agent, dispersant and source of phospholipids.

It is formulated into dietary supplements as softgels, capsules, powders and granules, into chocolate, confectionery, margarine, bakery, instant powders and infant formula, into cosmetic emulsions, pharmaceutical excipients and animal feed.

The material ranges from a yellow to brown viscous liquid to a light tan powder or granules by grade (CAS 97281-47-5; phosphatidylcholine, the principal phospholipid, has molecular formula C42H80NO8P and molecular weight 758.1). Acetone-insoluble matter, acid value, peroxide value and moisture are standardised to specification; identity and phospholipid profile are confirmed by thin-layer chromatography, and heavy-metal and microbial limits are supplied to specification and confirmed on each lot's certificate of analysis.
