Lactase

Category: Functional Ingredients

Lactase (beta-galactosidase) is an enzyme that hydrolyses lactose, the disaccharide of milk, into its two component sugars, glucose and galactose. The commercial enzyme is produced by controlled fermentation of food-grade microorganisms such as Aspergillus oryzae or Kluyveromyces lactis. Nustras supplies it as a dry enzyme powder and as a liquid enzyme concentrate for food processing and supplement use.

Lactase is formulated into lactose-free and lactose-reduced milk, yogurt and whey products, into enzyme supplements in tablet, capsule and drop form, into digestive-enzyme blends.

The powder grade is a white to light tan free-flowing powder and the liquid grade a clear to amber solution. Enzyme activity is standardised to specification and determined by a lactose or ONPG substrate assay; the source organism is stated on the specification, and loss on drying, heavy-metal and microbial limits are supplied to specification and confirmed on each lot's certificate of analysis.

Nustras supplies lactase in bulk commercial quantities, in sealed food-grade bags, fibre drums and liquid containers, to manufacturers and formulators internationally, with a certificate of analysis, specification sheet and country-of-origin documentation on every lot. Lactase from these source organisms is an accepted food enzyme and supplement ingredient in major markets; buyers confirm the permitted source, activity and claim for their application.
