Gluconolactone, or glucono-delta-lactone (GDL), is the cyclic ester of gluconic acid, produced by fermentation of glucose. In water it slowly hydrolyses to gluconic acid, which gives it a gradual, mild acidifying action. Nustras supplies gluconolactone as a white crystalline powder for use as an acidulant, leavening acid, sequestrant and coagulant in food, beverage, supplement and cosmetic formulations.
Gluconolactone is formulated into tofu and other protein gels as a coagulant, into chemically leavened bakery products and leavening premixes, into cured meat products, dairy desserts and beverages as a slow-acting acidulant, and into cosmetic and skin-care products.
The material is a white crystalline powder with CAS number 90-80-2, molecular formula C6H10O6 and molecular weight 178.14, standardised to specification. Identity is confirmed by infrared spectroscopy and assay by titration against the food-chemical monograph, and loss on drying, reducing substances, sulfated ash, heavy-metal and microbial limits are supplied to specification and confirmed on each lot's certificate of analysis.
Nustras supplies gluconolactone in bulk commercial quantities, in food-grade bags and sealed packaging, to manufacturers and formulators internationally, with a certificate of analysis, specification sheet and country-of-origin documentation on every lot. Glucono-delta-lactone is an accepted food additive in major markets; buyers confirm the permitted use and level for their application. Contact us for grade, pricing per kilogram and lead time.
