Ascorbyl Palmitate

Ascorbyl palmitate is the fat-soluble ester of vitamin C, formed by esterifying L-ascorbic acid with palmitic acid, and is supplied by Nustras as a fine white powder for use as an antioxidant and vitamin C source in lipid systems. Unlike water-soluble ascorbic acid, it dissolves in oils and fats, protecting them from oxidation and rancidity while contributing vitamin C activity.

It is used as an antioxidant, carrying the food-additive number E304(i), in edible oils and fats, infant formula, bakery and snack foods; as a lipid-phase vitamin C source in dietary supplements and softgels; and in cosmetic and topical formulations as a stable, oil-compatible vitamin C derivative. It is often paired with tocopherols for synergistic protection.

Ascorbyl palmitate assays at 98.0 to 100.5%. It carries CAS 137-66-6, the molecular formula C22H38O7 and a molecular weight of 414.5, and appears as a white to yellowish-white powder with a slight citrus odour. It should be stored cool and dry, protected from light, with food and pharmaceutical grades available.
