Amidated Pectin

Category: Chemicals

Amidated pectin is a low-methoxyl pectin in which part of the methyl-ester groups on the galacturonic acid backbone have been converted to amide groups by reaction with ammonia, supplied by Nustras as a powder for use as a gelling, thickening and stabilising agent. Pectin is a polysaccharide extracted from citrus peel or apple pomace; amidation gives a pectin that gels with calcium over a wider range of soluble-solids and pH conditions.

It is formulated into low-sugar and sugar-free jams and fruit preparations, fruit fillings for bakery, dairy desserts and yogurt fruit layers, confectionery and gummies, glazes, and into pharmaceutical and nutraceutical gel and tablet systems.

The material is an off-white to light-tan powder. Degree of esterification, degree of amidation, galacturonic acid content and gel strength are standardised to specification; identity is confirmed by the compendial identification tests for pectin, and heavy-metal and microbial limits are supplied to specification and confirmed on each lot's certificate of analysis.

Nustras supplies amidated pectin in bulk commercial quantities, in food-grade bags and fibre drums, to manufacturers and formulators internationally, with a certificate of analysis, specification sheet and country-of-origin documentation on every lot. Amidated pectin is an accepted food additive in major markets; buyers confirm the permitted use and level for their application. Contact us for grade, pricing per kilogram and lead time.
