Vanilla

Vanilla is the cured seed pod of Vanilla planifolia, a climbing orchid cultivated in tropical regions. The green pod develops its aroma only through curing, a controlled process of blanching, sweating and drying; vanillin is the principal aromatic compound, accompanied by many minor volatile constituents.

The beans are dark brown, pliable and oily with a strong sweet aroma; the powder is dark brown with the same character, and the extract is a brown liquid. Identity and vanillin content are confirmed by HPLC and standardised to specification, with moisture, heavy-metal and microbial limits supplied to specification and confirmed on each lot's certificate of analysis.
