Turmeric Fingers

Turmeric fingers are the dried lateral rhizomes of Curcuma longa L., a perennial herb of the ginger family cultivated across South and South-East Asia, supplied by Nustras as whole, cured and dried fingers rather than as a ground powder. The rhizome owes its deep yellow-orange colour to the curcuminoids, principally curcumin, and its aroma to a volatile oil rich in turmerone.

Turmeric fingers are the starting material for ground turmeric powder, for curcuminoid extracts and oleoresin, and for natural yellow colouring; they are used by spice grinders, extraction plants and food manufacturers who mill or extract from the whole rhizome.

The material consists of hard, yellow-orange to brownish dried fingers with the characteristic odour of turmeric.
