Shiitake Mushroom

Shiitake mushroom is the fruiting body of Lentinula edodes, an edible mushroom cultivated on hardwood logs and sawdust substrate. The fruiting body contains beta-glucan polysaccharides, including lentinan, together with protein, B vitamins, ergosterol and the sulphur compound lenthionine that gives its flavour.
