Gum arabic spray dry is the spray-dried, powdered form of gum arabic (acacia gum), the natural gum exudate of the Acacia senegal tree, supplied by Nustras as a white to yellowish off-white powder used as a stabiliser, emulsifier, film-former and thickener. Gum arabic is a highly branched arabinogalactan polysaccharide with a small protein fraction.
