Ginseng, Chinese White

Chinese white ginseng is the dried, unsteamed root of Panax ginseng C.A. Meyer, a slow-growing perennial cultivated in north-east China. The root is washed, usually peeled and sun- or air-dried without the steaming step that produces red ginseng, so it keeps its pale colour.
