Cardamon

Cardamom (also spelled cardamon), Elettaria cardamomum, is a perennial of the ginger family (Zingiberaceae) native to southern India, grown for its seed pods; the seeds owe their warm, aromatic flavour to a volatile oil rich in cineole and terpinyl acetate. The seed is a dark reddish-brown to black angular seed with a strong aromatic odour and pungent taste; the powder is grey-brown and the extract a brown powder. Identity is confirmed by macroscopic and microscopic examination or by HPTLC, with volatile oil content standardised to specification. Heavy-metal, pesticide and microbial limits are supplied to specification and confirmed on each lot's certificate of analysis.
