Anise

Anise, Pimpinella anisum, is an annual of the carrot family (Apiaceae) grown for its small ridged fruits, commonly called aniseed, whose sweet liquorice-like flavour comes from a volatile oil rich in trans-anethole. The whole seed is a grey-green to brown ovoid fruit with a characteristic sweet aroma; the powder is greyish-brown and the extract a brown powder. Identity is confirmed by macroscopic and microscopic examination or by HPTLC, with volatile oil and anethole content standardised to specification. Heavy-metal and microbial limits are supplied to specification and confirmed on each lot's certificate of analysis.
