L-Cysteine

L-Cysteine is a sulphur-containing amino acid, supplied by Nustras as a white crystalline powder in standard and vegan (fermentation-derived) grades, and used as an amino acid ingredient in supplements, foods and cosmetics. Cysteine carries a free thiol (-SH) group, which lets two cysteine molecules join through a disulphide bond to form cystine; this chemistry underlies its role in protein structure and its reactivity in food systems.
